made this a couple weeks ago for dinner guests - really was fantastic . . bit a disconnect though when it comes to adding a top crust to a pre-cooked bottom crust . . I think in the future, I'll full cook bottom crusts AND top crusts, and assemble with the crawfish in the middle at the time of serving . . .I KNOW it's not the "way it's done" . . but I'll let you know how it turns out . . also thinking I can do individual servings this way . . .

What a great story! I was born and raised on the MS Gulf Coast and lived in NOLA the first 10 years out of college. This brings back so many great memories, although I must admit that I've never had crawfish pie. I will now and will "Pass a good time" doing it. Thank you.

Hi Chef Lisa! I have never seen another recipe for this outside of my stepmom's handwritten notes and I just saw a recipe in Louisiana Life for the same thing! How funny. I hope you have a chance to give it a shot before Crawfish season comes to an end. Hurry up!

I don't know what makes me more drawn to this pie--the photos, the recipe, or the beautiful story about the three of you preparing and documenting this meal together. I hope I can get my hands on some crawfish soon--I've never eaten crawfish pie, but now I'm dying to try it!
