Created by chef Thomas Keller, olive oil producer Armando Manni, and chocolatier Chi Bui, they have EVOO in place of cocoa butter, which gives the chocolate a super-silky texture, boosts antioxidant levels, and reveals the more nuanced flavors in the cacao.
