From our friends at Especially Puglia comes a new straight-from-the-farm gift that we couldn’t be happier about—after all, it’s cheese! And not just any cheese: Caciocavallo cheese is a traditional Pugliese pulled-curd cheese made by pouring the milk of the rare-breed Podolica cow into a gourd-shaped round. It ages for a day in the heat of olive wood fires and hangs from wooden poles for the remaining maturation. The result? A wonderfully sharp, earthy cheese with a semi-firm texture that hardens as it ages.

Choose between a half cheese and a full cheese, both aged 3 months, with their origin in one of four pastures: La Montagnola Farm and Masseria Paglicci in the lush Gargano National Park; the Colantuono Family, who guide their cows from the plains of Puglia to the mountains of Molise; and Fattoria Fiorentino, set among hills dotted with 13th century castles.
Every option comes with an adoption certificate detailing the name of your adopted cow and its date of birth. Please note that the adoption certificate will be addressed to name listed as the shipping recipient. Should you have a special name request for the certificate, please use the preferred name in the Gift Note field at checkout.
