The trick to macarons (ok, besides getting the egg whites and the filling and the feet just so) is getting the tiny sandwich halves to line up beautifully, so you have perfect, even bites of bliss. This, of course, relies on piping your cookies all the same size, which is easier said than done—unless you’ve got a guide like this macaron mat. Pipe out 20 cookies over the evenly-spaced circles, starting from the center. The mat fits perfectly into an 18” x 13” baking sheet, which you can pop in the oven together, no grease or parchment paper required. And voila! Your macarons have never looked better.
