Unlike its younger chums, this aged balsamic is the stuff of dressing dreams. Made in the old world tradition, it’s tenderly aged in casks and sung to at least once a day (OK, we might have made that part up) for a minimum of 12 years. So while this may look like a single bottle, it’s a virtual flavor extravaganza that includes a whole array of wood notes like oak, juniper, chestnut and acacia. Each bottle has a unique texture and taste that plays well with both sweet and savory dishes (think strawberries-to-Pecorino) so it’s safe to go wild! Choose from 12, 15, and 25-year bottle options.
