Chef’s knife, make way: this 7-inch carbon steel blade is sized just right for everyday jobs (and it’s got a special talent too). The Japanese word Santoku translates to “three virtues”, in this case referencing the knife’s three uses: slicing, dicing, and mincing. (We’d like to add a 4th: this German-made dynamo is—So. Dang. Comfortable.) A traditional santoku knife has a straighter blade than your average chef's version but Zwilling has cleverly combined the best of both worlds: the ever-so-slightly curved shape supports both chopping and a smooth rocking motion. And unlike most, this one’s got a bolster (the little seat for your thumb) that doesn’t go to the knife edge so it’s easier to sharpen and a dream to hold.
