That’s OK, we’ll walk you through it: Just warm up the pan, toss in a few wood chips (mesquite is the most popular, but we’re experimenting with this sampler pack), top it off with the stainless steel insert, then add fish, poultry, brisket, potatoes, cheese, onions...you get the picture. The domed lid will keep all the good stuff inside while those chips work their magic. We give it extra points for being safe to use on all stovetops, oven-proof (up to 600°F!), and dishwasher-friendly.
